A fine partner for fried chicken
2 eggs separated
2 tbsp flour
1 can cream style corn
½ tsp baking powder
½ tsp salt
2 tbsp minced parsley
1 tbsp soft margarine
2 tbsp melted fat or oil
½ cup medium cracker crumbs
Beat egg whites till stiff. Beat yolks slightly. Add corn, salt, and vanilla to yolks. Mix. Mix crackers, baking powder, flour, add with parsley to corn mixture. Fold in egg whites. Heat fat in heavy skillet. Drop spoonfulls of mixture in hot fat. Flatten slightly. Fry well until golden brown on each side. Makes 12-16. Our corn pie.
